Healthy and Tasty Immunity Boosting Recipes



Want to boost your immunity during this current pandemic situation? Are you fed up with your daily food? So We are sharing some interesting recipes which are healthy as well as delicious too.

1.Orange and  Muskmelon Juice

Preparations Time:  5 mins   Cooking Time: 0 mins    Total Time: 5 mins    Makes 4 small glasses


Ingredients
 1/2 cups chilled and roughly chopped muskmelon (kharbooja)1
 cup chilled and roughly chopped orange
1 cup chilled carrot strips
1 tsp lemon juice
1 tsp sugar

Method
  1. Add the muskmelon, orange and carrots a few at a time in a hopper.
  2. Add the lemon juice and sugar to the juice and mix well.
  3. Pour equal quantities of the juice into 4 individual glasses.
Serve immediately topped with 2 ice-cubes in each glass.        


2.Lemon coriander vitamin c rich soup  




Preparation Time: 10 mins   Cooking Time: 7 mins   Total Time: 17 mins    Makes 4 servings.                                                                         Ingredients
1 tbsp lemon juice
1/4 cup finely chopped coriander (dhania)
2 tsp oil
2 tsp finely chopped garlic (lehsun)
2 tsp finely chopped green chillies
1/4 cup finely chopped onions
1/4 cup finely chopped cabbage
1/4 cup finely chopped carrot
3 cups basic vegetable stock
salt to taste
2 tsp cornflour dissolved in 2 tbsp water (optional)                                                                               

Method
1. heat the oil in a deep non-stick pan, add the garlic and green chillies and sauté on a medium flame for a few seconds.
2 . Add the onions and sauté on a medium flame for 1 to 2 minutes.
3. Add the cabbage and carrots and sauté on a flame for 1 minute.
4. Add the vegetable stock, lemon juice, salt and cornflour-water mixture, mix well and cook on a medium flame for 2 to 3 minutes . Add the coriander and mix well.
5.Serve the lemon and coriander soup immediately


3. Dry Apricot Energy Balls 




PrepTime:5 mins   MakeTime:5 mins 

Ingredients 

Dried Figs / Anjeer – 1 cup
Fresh Apple – 1 (small size)
Almonds / Badam – 1 cup
Hot Water – 1 cup / as required.

Method                                       
1. Gather all ingredients at one place.
2.Then soak the almonds and dry figs, separately, for around five minutes in hot water.
3. Chop up the fresh apple, dry apricots, soaked almonds, soaked dry figs into pieces.
4. Transfer everything into a food processor / mixie. Add the oats too.
5.Blend everything into coarse paste.
6. Take out the mix into a bowl.
7. Round the mix into balls. Done!!


4. Oats Moong Dal Tikki




Preparation Time: 10 mins   Cooking Time: 25 mins   Total Time: 35 mins    Makes 12 tikkis
Ingredients
1/2 cup yellow moong dal (split yellow gram)
1/2 cup quick-cooking rolled oats
2 tbsp fresh curd (Dahi)
3 tbsp grated onions
1/2 tsp finely chopped green chillies
2 tsp chaat masala
2 tsp chilli powder
1/4 tsp garam masala
1/4 tsp turmeric powder (haldi)
1 tsp ginger-garlic (adrak-lehsun) paste
2 tbsp finely chopped coriander (dhania)
salt to taste
2 tsp oil for greasing and cooking

Method
  1. boil the yellow moong dal in 1 cup of water in a deep pan till the dal is soft and cooked and all the water has evaporated.
  2. blend the dal in a mixer to a coarse paste.
  3. Transfer the paste into a bowl, add all the remaining ingredients and mix it well.
  4. Divide the mixture into equal portions and shape each portion (2½”) round flat tikki.
  5. Lightly grease a non-stick tawa (griddle) with oil.
  6. Cook each oats moong dal tikki using 1/8 tsp of oil, till they turn golden brown in colour from both the sides. Evenly cooked it.
  7. Serve the oats moong dal tikki with healthy green chutney.

5. Soya Bhurji ( Soya Granules Recipes)




Preparation Time: 10 mins   Cooking Time: 8 mins   Total Time: 18 mins    Makes 4 servings
Ingredients
Ingredients
1 1/2 cups soaked soy granules
2 tsp oil
1/4 cup finely chopped onions
1 tsp garlic (lehsun) paste
1/2 cup finely chopped tomatoes
1/2 tsp turmeric powder (haldi)
1 tsp chilli powder
1/2 tsp garam masala
salt to taste
1/4 cup boiled green peas
2 tsp lemon juice

Method
1. For soya bhurjiheat the oil in a non-stick pan, add onions and garlic paste and sauté on a medium flame for 1 to 2 minutes.
2.Add the tomatoes and 2 tbsp of water, mix well and cook on a medium flame for 2 to 3 minutes, and stirring occasionally.Add the turmeric powder, chilli powder and garam masala, mix it well and cook on a medium flame for 1 minute and stirring continuously. We can also add 1 tbsp of water while cooking to prevent masala from burning
3.Add the soya granules, green peas and salt, mix well and cook for another 2 minutes, while stirring occasionally.
4.off the flame, add lemon juice and mix well.
Serve soya matar bhurji .

6 .Homemade Almond Butter




Preparation Time: 5 mins   Cooking Time: 5 mins   Blending time:  20 minutes  Total Time: 30min Makes 1 cup
Ingredients                                                                     2cups Almonds                                                         
1tbsp coconut oil

Method

1. Roast the almonds in a pan for 5 minutes on a medium flame.
2. Cool completely. Once cooled, blend in a mixer.
3. Add the coconut oil and blend for 10 minutes.
4. Wait for a minute, blend again for 5 minutes, while switching the knob on and off after every half minute. Wait for another minute and finally blend again for 5 minutes. Store in a glass bottle covered with a lid in the refrigerator.
